97 Days to chez Julia -- Summer is here!

Kicking off the first day of summer with a fat basil harvest and a batch of pistou, the French sauce made with pounded herbs, garlic, and olive oil. Think ‘pesto’ without the pine nuts. I guess I could be French -- I skip the luxury of pine nuts when I make the summer staple, and add a little tomato. For full French immersion, I made David Lebovitz’s pistou recipe to commemorate the upcoming chez Julia festivities. While the herbs are abundant in my corner of the world, the olive trees in France are beginning to bloom. With a little help from Mother Nature, olive harvest will be dawning in October. I won’t wish precious summer away, but it’s a joy to imagine what is coming next.

Pistou

  • 1 large clove garlic, peeled
  • pinch of coarse salt
  • 2 cups packed fresh basil leaves
  • 1/4 cup olive oil
  • 1 small tomato, peeled, seeded, and diced
  • 1 1/2 ounces Parmesan cheese, grated

Blend the garlic with a large pinch of salt in the container of a food processor. Add the basil leaves and process until finely chopped. Drizzle the olive oil through the top tube of the processor, then add the tomato and cheese. Pulse the machine until the tomato is incorporated. Serve with vegetable soup or over freshly cooked pasta.

Fresh Herb Primer

A little pot of fresh herbs in the kitchen window makes life better. A few leaves of fresh basil enhance everything, from fancying up a glass of water to authenticating your marinara. Green thumb or no, give it a try. Or pick some up at the farmer's market. Either way. And here's a 101 for the best herb pairings. Happy Cooking!

  • Basil -- Italiano! Great with eggs, fish. and poultry. Add a sprig to your water with a lemon twist
  • Chives -- A lovely addition to a cream soup. Also great with eggs, fish, and poultry
  • Cilantro -- Wake up jarred salsa with a handful of chopped cilantro. Stir some into chicken soup for a taste of the tropics
  • Dill -- Mix with plain yogurt and chopped fresh cucumber (plus some salt to taste) for a quick, calcium-rich dip
  • Mint -- Steep fresh mint with your morning tea for a refreshing lift. Freeze mint leaves in ice cube trays and add the ice cubes to your water or iced tea
  • Oregano -- Add whole sprigs to a simmering pot of vegetable soup. Add chopped fresh oregano to a roasted vegetable sandwich
  • Parsley -- More than just a garnish! It elevates everything, love it on potato salad
  • Rosemary -- Mince fresh rosemary and make a great dipping oil for your next baguette
  • Sage -- My favorite with pork. 
  • Thyme -- Stuff a few sprigs under the skin of a whole chicken before roasting
